 Post subject: How do I get things crispy in the oven up here at 9000 feet?

None of my oven "frying" recipes seem to work up here. Any advice? For example, in Denver I bake potato strips instead of frying. In Denver I bake chicken wings at 400 for an hour and they come out crispy. Not up here. Our oven is working correctly and has been tested. I have to bake them for an extra 45 minutes to get them the way I like. Is that the general rule? That it takes much longer at high elevations?

I use the convection option, but that's not available on all ovens.

Yeah this doesn't have a convection function.

After cooking place foods under the broiler for a few minutes, not a cook, hate cooking but wouldn't this crisp things?

I use the broiler sometimes, but find it can dry things like chicken fingers out. I got frustrated enough with soggy sweet potato fries that I decided to try one of those air fryers. There's a learning curve to it, so I haven't mastered it, but it didn't do bad on the sweet potato fries, it put a nice crust on chili rellenos and it makes really crisp garlic bread. I don't think it works as well at high altitude as it would at lower altitudes though.

I love to cook, but when we moved here from England I couldn't even boil a potato. Eventually I realised that the altitude was the problem not me and sorted myself out. It didn't help that your meat cuts are all different to the British ones and I was buying the wrong cuts :doh:

Try turning the temperature up 25-50 degrees and shortening the cooking time. Spray a small amount of cooking spray on both sides of the food and flip halfway during the cooking process.

It works for me at 8500 ft. I've lived here for 34 years.

I recently purchased an air fryer. You only spray a tiny bit of oil (and whatever other coatings you may put on your stuff) and it amazing how well it cooks.

Sorry, I'm not much help with the oven, I prefer using the old fashioned charcoal grill for most of my cooking. Even that takes longer up here, but so worth it for the added flavor.

chicken breasts (on the bone) are amazing (rolled in egg beater and bread crumbs and whatever spices). French fries are pretty good. not much more yet. too busy to delve in. I need to get a cook book.
