We were given a large box of huge roasted and salted cashews for Christmas.
The flavor is amazing! Any ideas of what I can do with them? Thanks!

One of my favorite Asian dishes is Cashew Shrimp or Cashew Chicken. I don't have a recipe but I'll bet you can find some great ones with a Google search! If I run across one, I'll post a link for you.

ETA: Are you able to make and eat something like Cashew Brittle? Not sure of dietary restrictions.

I've not had great luck with hard candies like brittles.
It's the stirring with arthritic hands...

Absolutely understand - I haven't made it in decades for the same reason. I'll look through some of my recipes and see if I have anything with cashews.

I just saved this recipe to try - you'll probably need to leave the soy sauce out because of the gluten:

Slow Cooker Cashew Chicken

Ingredients
• 2 lbs boneless skinless chicken breasts (About 4 pieces), cut into 1 inch pieces
• 3 Tablespoons Cornstarch
• ½ tsp black pepper
• 1 Tbsp canola oil
• 1/4 cup low sodium soy sauce
• 4 Tbsp rice wine vinegar
• 4 Tablespoons ketchup
• 2 Tablespoons sweet chili sauce
• 2 Tbsp brown sugar
• 2 garlic cloves, minced
• 1 tsp grated fresh ginger
• ¼ tsp red pepper flakes
• 1 cup cashews
Instructions
1. Combine cornstarch and pepper in resealable food storage bag. Add chicken. Shake to coat with cornstarch mixture.
2. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker.
3. Combine soy sauce, vinegar, ketchup, sweet chili sauce sugar, garlic, ginger, pepper flakes, and cashews in small bowl; pour over chicken. (I like my cashews to be softer so I add them during the cooking process, if you want more of a crunch, add them right before serving)
4. Cook on LOW for 3 to 4 hours.
5. Serve over rice.

My father made peanut brittle in the microwave and his recipe had very little stirring. I don't have his recipe but if you like candy, you can probably find a microwave version with google. I remember my father's brittle was very good.

I could so make that and it sound wonderful. I use Bragg's Liquid Aminos and it is like the best soy sauce available. I would now use this product even if I could have gluten. Love it and use it in lots of things. Thank you for the recipe.

Cashew clusters instead of peanut clusters. Melt choc chips and bark, add lots of broken up cashews and drop onto wax paper. Yummy little candies and they freeze. (chocoholic)

Agreed! Here's my go-to recipe:

Cashew Chicken Salad

2 cups diced cooked chicken
1/2 cup chopped cashews
1/2 cup chopped red apple
1/2 cup chopped, peeled cucumber
1/2 cup mayo
1/2 tsp sugar
salt & pepper to taste

Mix the chicken, nuts, apple & cucumber in a large bowl. Blend mayo & seasonings in small bowl. Add to chicken mixture and toss to coat!
So pretty served in lettuce cups!

I love to use ground cashews to thicken certain types of soups (as I am also gluten free and can't use flour).

My favorite soups for cashews are: shrimp bisque (or crab or any type of seafood), butternut squash soup, carrot soup and I even did a leek and kale cream soup that turned out well.

I just throw the cashews in my little food processor. I don't care if some are not ground up well. I happen to like texture in my soups.



Also I use cashews to make Pad Thai since I am allergic to peanuts.
