I made a pumpkin cheeseball for a small gathering the other day (looks like a pumpkin, not made of pumpkin) and while it was a hit, the gathering was smaller then originally expected and there is some leftover that I am trying to figure out how to use. It has mostly cream cheese, cheddar cheese, red sweet pepper, green onion and spices. Its coated in really smashed cheeze-its crackers. Way too much left for us to eat if I just refrigerated it. Can I freeze it in small portions and it be any good? I've come up with maybe putting it in a macaroni and cheese or a mashed potato dish or an egg frittata and freeze those- any other ideas?

Sounds like it could be a nice thickener for a potato soup!
