Cranberry Pork Loin

2 1/2 to 3 lb. boneless pork loin 1 can (16 oz. ) jelled cranberry sauce 1/2 cup cranberry OR apple juice 1/4 cup sugar 2 tbsp spicy brown mustard

Sauce: 2 tbsp cornstarch 1/4 cup warm water 1/2 tsp salt pepper to taste

Place pork loin in a slow cooker. Combine cranberry sauce, juice, sugar, and mustard until smooth. Pour over pork loin. Cover and slow cook on low for 7-8 hours. Remove pork and place on a serving dish.
Sauce:
In a sauce pan, combine cornstarch and water until smooth; gradually stir in cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in salt and pepper. Serve over sliced pork. |
