Difficulty: Easy
Ingredients:
2-5 Jars of Ol' Gringo Gourmet Green Chili
(Kings Soopers only)
Chopped Fresh Pork chunks (1-2 packages)
1-4 Cans of Ro-Tel Mexican Diced Tomatos
1-2 Cans of Stokes Pork Green Chile
Pinch of Salt and Pepper
Fresh Honey
Cooking Instructions:
You control the heat level and batch size with this recipe. Ol'Gringo comes in Mild and Hot. The Hot is Hot. Ro-Tel and the Stokes also comes in various heat levels. I would suggest mixing and matching and not using all hot or all mild. Something gets lost in the overall flavor of the Green Chili if all the same heat levels are used. Best if you start early and let cook all day.

In a Crock pot slowly cook pork chunks. Season with the salt and pepper. I will even further break down the chunks into smaller pieces before cooking. Once Cooked start adding the Ol'Gringo. One Jar at a time for batch control. Add a can of Ro-Tel. I usually add 1 can/2 Jar of Ol'Gringo. In order to thicken the sauce add a can of the Stokes Green Chili. 2 cans may be needed for larger batch sizes. Let cook all day.
Stop by evey now and again to check flavor and heat level. If not hot enough you can always add another jar of hot Ol'Gringo. It is important to leave room in the pot so flavor can be adjusted throughout the day.
If the mixture is too hot add a teaspoon or two of honey. This will breakdown the acidity. Beware however, too much honey makes it too sweet. Therefore add slowly if needed throughout the day.

Serving Suggestions:
Depends of size of batch.
Great for use as a soup, especially when you have a cold.
Serve over eggs, burritos, tacos, etc...
Make Breakfast Burrito and add to mixture.
Additional Comments:
Although I have tried other Gourmet Green Chili Sauces with this recipe, I always go back to Ol'Gringos. You can only get it at King Soopers however.
This freezes great too for later use.>
