Homemade Irish Corned Beef

Ingredients:
6 cups water
2 cups lager beer
1.5 cups coarse kosher salt
1 cup packed brown sugar
1/4 cup pickling spices
1 flat cut beef brisket - between 6-8 pounds
Cooking Instructions:
Pour 6 cups water and beer into large deep roasting pan. Add coarse salt; stir until dissolved. Add brown sugar; stir until dissolved.

Pierce brisket all over with a small sharp knife.

Submerge brisket in liquid, them top with a heavy platter to weight it down. Cover and refrigerate for 4 days.

Remove brisket from brine. Stir liquid to blend. Return brisket to brine; top with the heavy platter. Cover; refrigerate for 4 more days.

Rinse with cold running water and prepare as you normally would.

Just one note................it is NOT red in color as the dyed, store bought version but the flavor is phenomenal.>
