Banana Sunflower Cookies

3 bananas, mashed 1/2 cup canola oil 1/2 cup granulated sugar 2 cups flour |
1 cup sunflower seeds 1 tablespoon baking powder 1 teaspoon baking soda |

Instructions: |
Preheat oven to 350 degrees. Coat a baking sheet with cooking spray.
In a large bowl, use an electric mixer on medium speed to cream together the bananas, oil and sugar for 1 minute.
In a separate bowl, mix the flour with the sunflower seeds, baking powder and baking soda. Add the flour mixture to the banana mixture. Mix thoroughly to combine. Chill in the refrigerator for 30 minutes.
Drop rounded tablespoons of the dough onto the baking sheet, placing them about 2" apart. Bake for 10 minutes, or until the edges are golden brown. |
