Pecan Crescents

Ingredients:
2 cups flour
1 cup butter
1 cup pecans, ground
1/2 cup confectioners sugar
1/8 tsp salt
1 tsp vanilla extract
1/4 tsp almond extract
2 additional cups confectioners sugar.
Cooking Instructions:
Combine flour, butter, nuts, confectioners sugar, salt, and extracts. Mix with hands until thoroughly combined. Form, i tablespoon for each, into crescents. Place 2 inches apart, on ungreased cookie sheet. Bake at 375?F for 12 - 15 minutes. Let stand 1 minute, remove from cookie sheet and roll in 2 cups confectioners sugar.

Note 1: Actually, I first grind 1 cup of pecans in a food processor. And then, Add the dry ingredients and process 20 seconds. Next, I add the rest of the ingredients and process until well mixed. Turn out the mixture into a bowl and work with my hands until the dough holds together. I refrigerate the dough until I get around to forming the cookies.

Note 2: These cookies are better after they have mellowed, about 1 week. The flavors blend together better.
