Cheddar Pecan Crisps

Ingredients:
1 Stick unsalted butter, softened
8 ozs Grated white cheddar cheese
1 Large egg
1/2 t Salt
1/2 t Cayenne pepper
1/2 C Atkins bake mix
2/3 to 1 C Finely chopped pecans
Cooking Instructions:
Beat the butter and cheese with mixer.

Add the rest of the ingredients.

Chill for about 15 minutes.

Cut mixture into thirds and roll 1/3 of it at a time into a 1 1/2" round log.

Slice and bake on ungreased cookie sheet for about 15 to 18 miuntes.

Serving Suggestions:
Great with salads, soups, etc.
