Amish Friendship Bread Starter

In crock, preferably, mix 1 cup milk
|
1 cup sugar 1 cup flour |

Stir with wooden spoon, cover with plastic wrap and stir daily until day 5
Add above proportions again. This gives you 3 cups of starter to share with friends.
Continue stirring daily with wooden spoon until day 10.
Remove 3 cups of starter for friends and use remainder with:
2/3 cups oil
2 cups flour
1 1/4/ tsp. baking powder
3 eggs (I use duck or goose eggs)
1 tsp cinnamon
1 tsp. vanilla
1/2/ tsp salt
1/2 tsp baking soda
Pour into 2 well greased and sugared loaf pans. Also works well with 1 large and 3 small loaf pans.
Bake 40-50 minutes at 350

This is the "starter" similar to sourdough, or sponge (known by different names by region.) This is an old-fashioned yeast, brought to and across this country by immigrants and pioneers. It is kept out at room temperature for those first ten days. Just be sure to keep everything clean; crock, spoons, anything that comes into contact with your starter. If the mixture turns orange or blue, or develops anything other than a yeast smell, discard and start again.
Afterward, keep tightly covered in refrigerator.
After each use, feed (refresh) starter with:
1 cup milk
1 cup sugar
1 cup flour
Leave out for a few hours, return to refrigerator until next time.
