Crabmeat Frittata

3 T Butter 1/4 lb Mushrooms, sliced 2 Green onions, sliced thinly 1 lb Lump crabmeat 8 Eggs, separated

1/4 C Heavy cream 1/2 t Tabasco sauce 1/4 t Salt 1 C Shredded swiss cheese |

Instructions: |
Melt 2 T butter in large ovenproof skillet over medium-high heat. Add mushrooms and green onions, cook and stir 3 to 5 minutes. Remove from skillet and set aside.
Pick out and discard any shell or cartilage from crabmeat. Flake crabmeat with fork.
Beat egg yolks with electric mixer at high speed until slightly thickened and lemon color. Stir in cream, tabasco sauce and salt.
Beat egg whites in clean large bowl with electric mixer at high speed until foamy. Gradually add to egg yolk mixture, whisking just until blended.
Melt remaining 1 T butter in skillet. Pour egg mixture into skillet. Cook until egg is almost set. Remove from heat.
Preheat broiler. Broil frittata 4 to 6 inches from heat until top is set.
Top with crabmeat and cheese. Return frittata to broiler. Broil until cheese is melted.
Garnish with fresh parsley. |
