Caesar Salad Dressing

Ingredients:
1 garlic clove (crushed)
3/4 cup of olive oil
2 cups 1/4 inch bread cubes
2 large heads of Romaine lettuce
fresh ground pepper
1/2 tsp salt
2 eggs soft cooked for one minute
3 Tbs. fresh lemon juice
1/2 cup grated parmesan cheese
Cooking Instructions:
Mix garlic with oil and let stand overnight

Heat 1/4 cup salad oil and saute bread cubes until golden brown on all sides. Drain and set aside.

Clean and trim Romaine. Wash and break into bite size pieces

Grind on plenty of black pepper

Add salt and remaining olive oil

Toss well to coat Romaine

Place shelled eggs in center of salad

Add lemon juice and toss until salad greens are coated

Toss with Parmesan cheese and croutons and serve at once

Additional Comments:
Note: Use a coddled eggs instead of cooking eggs in shell.

Coddled eggs:

Bring water to full boil. Remove from heat. Place shelled eggs in water, cover and let set for 1-1/2 minutes. Then add to salad. Use large perforated spoon to remove eggs from water. >
