Sausage and Chard

Ingredients:
1 lb tube of mild pork sausage
1/2 cup bread crumbs
1 egg
1 tsp salt
1/2 tsp pepper
pinch sage
pinch oregano
pinch red pepper
pinch celery seed
1 tbs butter
1 medium onion, diced
1 tsp crushed garlic
16 large leaves chard (or however much you have)
Cooking Instructions:
Mix sausage, bread crumbs, egg and spices together well with hands and form into meatballs. Sauté on medium until browned on all sides, then remove to a bowl. To the sausage drippings in the pan, add the butter, garlic and onion and sauté on low until translucent.
Meanwhile, wash the chard and cut out the tough part of the stalks. Roll 4 leaves together at a time and slice into thin ribbons. When onions are close to done, add chard to skillet and cover. The chard will steam down and wilt in 10-15 minutes. Add the meatballs back in and season to taste.
