On a microwave safe plate, line with several sheets of papertowel. Lay out the pepperoni slices in one even layer, and nuke in the micro for about a min (depending on wattage of your oven). They will get nice a crispy and most of the grease will be absorbed by the papertowel. If any in the center are not crispy looking and still feel soft, nuke again in about 15 sec increments.
Makes a perfect low-carb chip or cracker! Or, put a dab of cream cheese on each as an appetizer by itself.
