It was a King Soopers digital coupon kinda meal.
I was fortunate enough to score the last Perdue Reserve Roasting chicken. Being a chilly dreary day, I got it seasoned and into the oven with some rosemary fingerling potatoes and sautéed some asparagus in olive oil with garlic. Made gravy and had a glass of Chardonnay. It’s been dark for hours and I’m ready for bed!

Neighbor gifted me two enormous heads of cauliflower so I made cauliflower cheese soup with one. How yummy!

Took awhile to find this thread but here it is!
Going to cook up some Thai Chicken Curry Noodle Soup. We haven't had this in a couple of years. We liked it so much that we burned out on it a couple of years ago but ready to have a go at it again tonight. |

I'm going with the traditional Saint Patrick's Day dinner: corned beef, cabbage, and potatoes (no carrots). I love corned beef and it's cheapest to buy at this time of year so I go with the traditional. I did buy a corned beef for my freezer.

I completely spaced it out this year!!! Maybe I can pick a couple of them up next week for a good price? We really like to make Reubens with the leftovers - sometimes we just make Reubens by themselves and not as leftovers.
Curious, what do others make with any leftover corned beef?? |

Ahhhhhhh Fried Catfish...................I remember from my childhood - Illinois relatives always had a fish fry when we visited every summer and it was sooooo yummy.
