4 squares unsweetened chocolate 3/4 C. veg. shortening, butter or margarine 2 1/4 C. sugar 3 eggs 1 t. vanilla

1 1/4 C. flour 1/4 t. baking powder 1/4 t. salt optional 1 C. chopped nuts A little milk

Instructions: |
Preheat oven to 350 degrees.
Melt chocolate in large microwavable bowl along with shortening in microwave at high for 2 minutes or until shortening is melted. Stir until chocolate is completely melted.
Stir sugar into melted chocolate until well blended. Stir in eggs and vanilla until completely mixed. Mix in flour until well blended. Stir in nuts.
Spread in greased and floured 13x9 pan or smaller pan for thicker brownies.
Reduce oven temperature to 325 degrees. Bake for 35-40 mins. or until wooden toothpick inserted in center comes out clean.
Makes 24 brownies.

You can adjust the amount of flour and milk according to how chewy or how cake-like you want your brownies. Also, the addition of the baking powder makes more cake-like brownies. If your brownies are still more dense than you would like, just add more baking powder. That is one of the main keys to getting brownies to rise at this altitude. Also, spread the batter so that it is thicker at the edges and corners as the brownies tend to bake faster there. Don't overcook! I use a glass or stainless steel pan rather than a dark enamel pan. |
